reteta originala ken townely
This is the way I prepare them. The second boil is important if you want to ensure the jelly arrives quickly.

Place one kilo of nuts in a sealable bucket and add 250g of sugar. Then cover the nuts with boiling water to dissolve the sugar. Stir well and allow the water to cool.

Once the water has cooled down add 25ml of your prefered flavour. Stir the liquid and nuts well then seal the bucket.

Allow the nuts to soak for two or three days.

Next transfer the tiger nuts, together with the liquid in which they have been soaking, to a large saucepan.

Bring to the boil and simmer over a medium heat for at least 2 hours, checking from time to time to make sure that the water covers the nuts while they are being simmered. Add more boiling water from a kettle if needed.

Remove from the heat and allow the nuts to cool, then transfer to a clean sealable bucket. Drain off the liquor in which they have boiled and add clean boiling water. Boil them again for 30 minutes.

Seal the bucket and allow the nuts to cool in the "new" water.

Place the bucket in the airing cupboard and leave for 2-3 days.

Now the water thickens as the tigers start to exude their slime to produce a thick jelly around the nuts. They are now at the ultimate stage of their effectiveness and should ideally be used within a couple of weeks or so.

Alternatively you can place the jelly and the nuts in plastic containers in which they can be frozen indefinitely. On removal from the freezer the nuts appear to be totally dry and the jelly seems to have disappeared. Don’t worry, a few hours after defrosting the jelly will reform and the nuts will be ready to use
