M-ati facut curios, eu nu am folosit niciodata caseina asa ca sa o comentam un pic.
Englezii astia zic asa:
Casein is the predominant phosphoprotein found in fresh milk and also in cheese. When coagulated with rennet, casein is sometimes called paracasein. British terminology, on the other hand, uses the term caseinogen for the uncoagulated protein and casein for the coagulated protein. As it exists in milk, it is a salt of calcium.
Casein is not coagulated by heat. It is precipitated by acids and by rennet, a proteolytic enzyme typically obtained from the stomachs of calves. The enzyme trypsin can hydrolyze off a phosphate-containing peptone.
Adica aceasta caseina este o proteina care se gaseste predominant in laptele prospt, de asemenea in branza.
Pana aici e bine c doar folosim vara lapte praf in mix, nu? Mergem mai departe
Daca se combina cu rennet rezulta paracaseina care este face acesta caseina sa fie solubila.
Si aici e bine ca doar in apa pescuim nu? tra la la caseina asta nu coaguleaza la caldura si se precipiata doar in contact cu rennet,acizi si ceva enzime care se gasesc in stomacul gestantelor ( corectati dac gresesc )
Si treaba asta e buna ca putem folosi ceva rennet in dip ca sa activam caseina/ prefer rennetul in locul gestantelor :)

Aici spun chinezii ca in urma unor studii s-a stabilit ca substanta asta poate fi promotorul tumorilor. Aviz crescatorilor de pesti si o bila neagra pentru caseina ( do oricare ar fi ea)

caseina si caseinatele sunt folosite pentru marirea, frgezirea ? si imitarea carnatilor, tocanei ....tra la la . Este des folosita ca supliment nutritiv, datorita nivelului ridict de proteina, nivelului scazut de lactoza si a gustului dulceag.
Daca asa e ...nu mai mananc carnati in viata mea, nu vreau sa fac tumoare :) glumesc , cred ca i-ar placea si crapui ...ce dulce nu-i place lui. nu? Plus ca am face un boilies mi aerat, sa spunem.

Mai scrie ca poate crea alergie, lucru pentru care, iar, nu as folosi caseina
